Level.dat, Level.dat_old and player files in the playerdata folder can become corrupt in certain situations
Please attach the console log of your game using these instructions after having done the following:
- Open a world
- Make some changes to it, ones that will likely lead to corruption
- Leave the world
- If the world has disappeared from your saves list, please copy the log and provide it here - if not, please start again with Step 1.
To make the world appear again in the saves list, you can rename the newest of the "level##########.dat" file to "level.dat" in the folder of the save affected by this.

i was trying to recreate it now, for some reason I could only get it to work in windowed mode.

My friends World has disappeared and will not show up in his single-player worlds yet it is still in the saves folder in .minecraft. After looking to see if this was a problem I found issue MC-193198 which has the same problem where their world is gone but my friend's level.dat file has no change to it. He sent me the world file and everything seems normal but the world doesn't show up in my single-player worlds either.

Very very strange - this is an extension of MC-193198. Please follow the instructions in the moderator note on that report, as we really really need to see a log of this occurring.
By the way, if you have not figured it out, just renaming the corrupted files (the one containing all the extra numbers at the end) can restore the lost player data.

can't get into a world with the files deleted(or don't know how). this is a world where it has happened repeatedly

Do you have any third party programs that are related to Minecraft save files installed on your device, and if so, does it still happen without them installed? Please also remove any bad antivirus programs like Norton or McAfee, and run a scan with Malwarebytes.
Could you also please update a couple of the "level#####################.dat" files?

I can't play minecraft anymore, because every world i start in, gets deleted.
Based on the information given in
MC-197540, this also seems to occur on Open to LAN with playerdata .dat files, suggesting that this is likely connected to player-specific parts of the level.dat.latest.log
Just occurred to me in 1.16.4, I will attach the console log from the time of the error. It appears to not be related to tile entities, as during the short period of time I was in the world prior to the level.dat error no tile entities were interacted with.
To replicate, you simply need to open either level.dat or level.dat_old with NBTExplorer (unsure if similar programs effect it the same), and then open the world. This causes the level##################.dat to generate, meaning it occurs on world load, not on world save. Also this is on a Windows environment
Um, wait, so you keep that NBTExplorer open for whole time? If yes, then it's not valid way of replication, since external program (that user opened themselves) is preventing Minecraft from writing to that file.
Yes, and that was my thought as well. Somebody else has been able to replicate it without using an external program, but they are unsure how
