What I expected to happen was:

If you could also add how to reproduce the issue it will help a volunteer confirm the issue (and also helps the devs reproduce it. There's a template on in the how-to that I'll paste below.
What I expected to happen was...:
When I killed a squid, it should have dropped an ink sac.
What actually happened was...:
Instead, it dropped an apple.
Steps to Reproduce:
Find a squid (though we all know how difficult they are to find when you actually want to find one).
Kill the squid.
Notice that it drops apples instead of ink sacs. How am I supposed to get black dye now?

Well really you just sprint up stairs, I use the android beta so it may not be in other beta's
I can confirm on 1.14.30.
When sprinting on stairs you lose a ton of hunger very fast.
I happen to have a staircase that goes from Y=11 to Y=62 in a test world, so I switched to survival and tested this. I ran up and down 6 times and did not lose any hunger.
@brody burns the video you attached does not show you losing any hunger either.
However, I do see the jumpiness in the video, and I can reproduce it in 1.14.30 in Windows 10 when I turn on auto-jump. I am therefore updating the title and description of this report and confirming it.
Edit: I neglected to re-test the hunger drain after turning on auto-jump. It stands to reason that it would drain at the same rate as sprint-jumping with auto-jump repeatedly activating. That defeats the purpose of using stairs!
This bug is old, it makes you run a little bit faster though

Still an issue
how to get it to say it is still an issue with the latest build?
To duplicate: somehow get the Jump Boost effect (potion or beacon comes to mind), make some stairs using stair blocks (at leat 5 blocks high). Make sure auto jump is it to on. Walk up (no need to sprint) the stairs. Repeat without auto jump setting enabled. The differences should be obvious.
Believe it or not this is still an annoying issue as of 1.20.81
