When a mob is spawned in riding another mob and you change certain NBT of the mob on the bottom both mobs will freeze and then a few seconds later the one on the bottom will despawn or die.

When using the enchantment table on a vanilla 1.8 server in a test of 200 books, 48 iron pickaxes, 15 stone swords & 37 stone shovels over a range of different levels,
every time a single enchantment was given to the item.From what I understand this is extremely unlikely to statistically happen so I figure it has to be a bug of some sort.
So far only experienced this in a server environment, one running command blocks in the background and another running 100% vanilla (no commands).

I've failed to reproduce this on 20w18a snapshot even using the exact same cage you built and with both less and more combinations of golems / pillagers.
The8BitMonkey Just a reminder to send the world for testing. As much as I'd hate to we would otherwise need to resolve this as a no-repro, but I'd love to try out on your world first.
So I think I got the hang of this. Apparently the pillagers doesn't see the Iron Golem through the fence which in itself is a bit of problem. They could obviously see it at some point in time, otherwise they would not be able to obtain their target.
What this leads to is constant pathfinding trying to get closer to the golem every tick causing the lag.
The quick fix to this is to limit the number of path updates, but in the long run we'd also like to take a look at both the Pillager AI here as well as why they can't see through the fences.

issue is still present in 13w47e and i've updated the affected version.
Also if i mod reads this, there is anther bug which I'm also experiencing that has been reported but yet to be confirmed by a mod, could you be so kind as to look into it.

Still an issue in 13w48a, unsure what Grum means by " can be updated without updating Minecraft itself".
Still happening with some of the servers in 13w48b, and the issue changes from server to server whenever the list is reloaded.
1 thing i did notice in 13w48b is that there is a percentage that increases that wasn't there in past version, so it's being worked on but still has a few bugs.
Working for me in 1.7.3 (on OSX 10.9 - Mavericks) as well, this is a great day.
Fixed for me in 1.7.3 Pre-Release.

Having this issue in 1.8 with Launcher 1.5.3, I would post the full log but it it exceeded the 20000 character limit on here so i've posted the log to pastebin, hope that it ok.

Uninstalling and Reinstalling didn't fix it but I did find a fix for anyone else having the issue.
I was required to find the path for Java and then paste it into the profile editor in the executable section as it seems the Launcher doesn't configure it itself.
Confirmed as of 1.8, when in the nether the following command is not effecting anyone when the they are run from the overworld within the spawn chunks on a clock.
/execute @a ~ ~ ~ detect ~ ~-1 ~ netherrack 0 setblock ~ ~-1 ~ stone 0

Not sure why this is but it seems to be the same issue the original post was referring to.
When testing I started with 30 XP on me and then kept enchanting until I was unable to enchant anymore with the levels I had, removed the surrounding book shelves to reduce the require levels and then continues this process until I was out of xp.
As for always taking the 3rd option, no I mixed it up between all 3 options.

I was able to re-produce this bug by simply throwing stacks of items to the ground, in my tests it happens rarely for small amounts of stacks but the more you throw down the more likely it is to happen.
When on the players shoulder the parrot seems to no longer be an entity, when showing the hitbox (F3+B) on mobs and items one does no appear around the parrot on the shoulder.
Edit:
It would seem that the target selector for the parrots on the shoulder are within the players NBT not through the parrot entity.

Once the TPS gets into the red as shown in the video mob movements becomes jittery and almost non existent, yes my FPS is fine and I'm able to move around the area but I'm no longer able to interact with my surroundings.
Hi, sorry for the delay in reply, had to return to work and not been able to check messages.
I've attached the world file generated in 1.16 Pre-Release 5 (latest as of posting) and still experiencing the bug.
Did a few tests myself and it would seem that the issue does lie with the Golem as the spikes only start to happen once the iron golem takes notices of the Pillagers, while the pillagers are just trying to attack the golem but before it notices them there are no spikes but as soon as the iron golem starts to track one of the pillagers but can't attack them the spikes start to go up.
