One thing not listed: the statistics. All of them have all words capitalized, except for (including the 1.8.2-pre1 ones):

- Plants potted
The statistics can't be translated (see MC-46341 and MC-77880). And while checking for non-translatable strings, I found out that the spectator commands (that also can't be translated) also have some inconsistencies, like "Close menu" and "Next Page".
Also, if you try to open a world that was last loaded in a newer version, the game will display a confirmation screen. The button to confirm is labeled "Use anyway", where this last word should be capitalized.
Also, "Auto-jump".

This ticket has been marked as a duplicate of MC-58677, in favor of the more general or better information provided.
The note block's name always appeared separated in the GUI: Note Block. But in the statistics, they appear as Noteblocks, when they actually should appear separated like in the item name (Note Block).
Note: There's another bug related to these strings, about the words played and tuned not being properly capitalized (see MC-58677). Since it's a single change in the default resource pack, they can be both fixed at the same time.

This "inconsistent" capitalization has been in here ever since Alpha.
Just because a bug has been around for a while doesn't mean it stops being a bug.
Well, its not a bug. Its always been like this.
Several of the developers are not native English speakers, and these buttons have been added or edited by various people at various times. While they probably intended them to be written exactly as they are at the time they wrote them, there's certainly some precedent for them considering and fixing these issues on the tracker. See
MC-32250,MC-34642,MC-2453,MCL-2176, and finallyMC-56254, which I have resolved as a duplicate of this report because it more clearly demonstrates the issue.For what it's worth, I personally am not advocating for any particular style, just that the style is consistent. There isn't really a clear rule in English for capitalization in cases like these, so confusion is understandable. It's just one of those silly things that, as a graphic designer, really gets under my skin.
Also, I didn't want to make the picture a mile tall so I only showed a few examples that I remembered offhand- there are probably other cases scattered around (I think there's a block or item name with this problem somewhere).
