Your texture pack has deceived you. It is showing them all with the same skin because of the bug where they don't show their profession (MCPE-42348).
If you look at spawn-egg spawned zombie villager's NBT data in a viewer like MCCToolChest, you can see its villager profession under "definitions." It is randomized.
Thank you for the additional detail. The baby not having a profession texture is expected because baby villagers don't have professions. For the adult, it could be that the game is just using the first profession texture from your pack due to MCPE-42348. Perhaps in the vanilla textures unemployed is stored first, so it uses that.
In any case, the pictures of how zombie villagers appear with your texture pack do not prove that they are farmers. The way they appear could be the result of MCPE-42348, or it could be due to an error in your pack. On the bug tracker we are not able to assess third-party packs or use them as the basis for a bug report. We need to be able to reproduce the problem in vanilla Minecraft for it to be confirmed as a bug.
I have checked world save NBT data in 1.14.60 and found that zombie villagers spawned by spawn eggs have random professions. If you can provide a world save from the current beta that contains several zombie villagers spawned by spawn eggs then I can check whether they actually have professions or not.
Thanks, it is clearer now what is going on. It looks like this issue is related to MCPE-42348 but not exactly the same. I will update and confirm the report when I have a bit more time.
As for a world save, if you could just make a flat test world with the pack applied and spawn some zombie villagers in it as you were doing in your other world, that should be within the upload size limit.
We can only track 1 issue per ticket.

This is already tracked at MCPE-42348.
This has been reported several times before but not followed up fully: MCPE-138795, MCPE-136090, MCPE-94530, MCPE-47143, mostly because it has been confounded by or conflated with other issues, including MCPE-73804, MCPE-48712, and probably also MCPE-42348.
It is not clear to me why you would expect zombie villagers to become unemployed when cured. Is it because they appear to have no profession as zombie villagers? That is itself a bug (MCPE-42348). Zombie villagers spawn naturally with professions. And for good reason: as it is now, they only get trade discounts if they had a profession before being cured (MCPE-124958).
It is also not clear to me why how this issue negatively impacts gameplay. You can change a cured zombie villager’s profession the same as any other villager. If you could give steps to specifically reproduce a cured-and-never-traded-with zombie villager having its profession locked, then that would clearly be a bug (regression of MCPE-48712).

The new Zombie Villager models have not been fully added. You can tell this is true because when these new zombie villagers are hit, they do not make the hurt sounds that they would usually make.
This is an intentional feature. The new zombie villagers have not been fully implemented yet and will lose their professions if killed by zombies. Like what smokeycheese13 stated you can tell it is not complete because when hurting the new zombie villagers it makes a similar sound to when hurting a player. And to anyone else reading this, be extremely careful to your villagers. If they convert to zombie villagers they will lose their trades forever.
You are mistaken, my friend. Anything and everything I claim in any bug report has been directly mentioned in the changelog, or from personal experience. This is both. When I updated I had the same problem you had until seconds later I realized that the reason why they've become unemployed is because of this:

So, therefore, I needed to resupply my villagers by allowing access to their work stations, otherwise, they would empty from supplies.
And there were no job sites anywhere, so I handcrafted my own and it worked! This has nothing to do to fix Zombie villagers though. This is why I am claiming that this is no bug but intentional.

I cannot actually tell which zombie villager is which. All the professions in the files are blank.
Fixed in 1.11.3.
1.13.0.1 is still affected, with the same behavior as 1.12.0.2.
NOT fixed in 1.11.3.

This one should be fixed because it is not just a java parity issue. The definitions are in the default resourcepack for all zombie villager profession layers in the entities folder but somehow it doesn't work.
Well technically this bug report was only made for villagers who don't keep their profession when converting to Zombie villagers. Going by these rules. This bug is completely fixed by all standards. You'll have to make another ticket for the Zombie villagers naturally spawning with the an unemployed profession.
Euwill Eusebio actually no, you didn't understand what's happening. All zombie villagers display the unemployed skin, regardless of their actual professions. That's what the ticket is about.
