Items texture in hand disappear while entering a nether portal
When entering a nether portal, any texture of a item in hand will disappear except for the hand itself. In the pictures you can see a sword half cut, a sword that disappeared, a block that disappeared, and the hand which isn't affected.

Still occurs in 1.17.11. From my testing (on Windows 10), only the texture of the item in the offhand now gets cut off when standing inside a Nether portal. Doesn't affect shields or maps in the offhand though.

Update for 1.17.30 (on Windows 10): Both mainhand and offhand items now fully render in Nether portals, though now the offhand item will get some parts of it get overlayed by the Nether portal texture
