Those aren't golden hearts; you are poisoned by the witch(es). These extra health hearts are "empty" because of the poison effect (MC-18880). Also, keep notice; only one issue per report, thank you.
This is related to MC-18880.
icons.png contains slots for poisoned and withered absorption hearts. The vanilla resource pack leaves these slots blank (hence MC-18880), however resource packs are able to take full control of them.
However, as of 20w46a, frozen heart textures have been added, and their flashing damage texture is assigned to the same empty spot poison-absorption is (hence MC-206881). As a result, any resource pack that adds exclusive textures for poisoned absorption hearts cannot add unique textures for damaged flashing frozen hearts.
To fix this, either the flashing frozen heart sprite should be relocated to a different part of icons.png (there are plenty of disused and never-used icons that could be removed to fit these in), or the poisoned/wither absorption hearts should be moved somewhere else instead as to allow resource pack creators to still give poisoned/withered absorption hearts unique textures.
A resource pack (and the contained icons.png) are attached that allow this effect to be seen.
note: as icons.png has finally been split as of 23w31a, this ticket will need redone.
The bug
In 20w48a and prior, by modifying icons.png, it was possible for absorption hearts to be given unique textures for when under the poison or wither status effects. The regions corresponding to these hearts was left blank in vanilla (hence MC-18880), however they could be filled in with a custom icons.png (see attached) and would work as expected. However, as of 20w49a, these custom hearts will no longer be displayed, which breaks any resource packs which used this feature previously.
To reproduce, use the attached resource pack, which changes the heart texture spaces accordingly, and have absorption in combination with either wither or poison. Note how the extra hearts gain a unique texture in 20w48a, but not in 20w49a.
To fix, the poisoned and withered absorption hearts could be reassigned to a new spot in icons.png (as to avoid conflict with frozen hearts and such) and given textures either duplicating normal absorption hearts (as to keep the current visuals while still allowing resource packs to change these) or new unique ones, although a better option would be to just split each heart into its own file as icons.png is already enough of a mess and was likely the reason this functionality went unheard of to the developers.
The absorption hearts in the attached screenshots don't actually have the wither texture, they're actually empty hearts due to MC-18880
Summary
The Absorption hearts color stays yellow, instead of having wither hearts as well when taking wither damage. This was fixed on Java 1.17 (MC-18880).
